Winterize before you leave for NY. The overnight lows will be in the mid 20's every night. Just bit upstate, I've already had snow and a couple below 20F nights this year, one October.

Wating to winterize until you're on the road doesn't make a lot of sense.

Why spend your vaca time winterizing?

Pull in with full propane, keep bottled water for drinking and teeth. Put a couple of Gallons of RV anti-freeze in the grey and black.

Run a little more in the p-traps after your turn the heat off.

One item that no one has mentioned is your personal clothing. Do you have heavy coats, gloves, scarfs, hats and boots? There is nothing worse than having cold feet. I would recommend dressing in layers to adjust for weather changes. Stocking caps for kids work great. We moved to Alabama after 25+ years living in Wisconsin. I also grew up in Buffalo, NY. Believe me when I tell you most native Southerners are not used to the often changing winter weather in the Northern states. Follow the advice given on winterizing your RV and pack for all possible weather conditions and enjoy your trip.

I read here somewhere that it takes about 15 minutes.
Guess not.
I also did some research. On the days that we will be there Dec 27th-29th, for the last 3 years it never got below like 36 degrees. I know that doesn't mean it wont freeze this time, but just hate to winterize if i don't need to.

I worked on oil rigs in Wyoming during some brutal winters. I can handle the cold, but thanks for the tips!

The above photo doesn't look like Manhattan to me! A large snowstorm during October in NYC is possible but rare.
The OP will need to closely monitor the weather and have some determination, but he can survive a December trip despite the photos of areas other than NYC.

My comments assume his rig has a heated enclosed underbelly and a decent sized fresh tank as city water will be unavailable.
My TT which is nothing special, can withstand ovenight temperature in the twenties as long as it gets above freezing during the day. With a space heater and plety of propane he can make it. The OP stated he worked on oil rigs, so I think he knows what he is getting into.

It's not that far away.

Take a cruise on the Saw Mill. Same latitude. The ocean moderates temps somewhat, but overnight lows can really bounce in Dec.

If it doesn't go below freezing, I'll spring for a couple of gallons of anti-freeze, as long as those who say no problem spring for repairs.

I don't mean to debate your point. I also agree the chances of it freezing overnight are very good. However the chances of it staying below freezing in Manhattan for an entire 24 hour period during December is less likely. As long as daytime temps are above freezing He should be OK.
Your advice to play it safe and winterize is reasonable and smart. But I would personally watch the weather closely and only winterize if extreme cold weather is forecast.
Honestly I am not familiar with the OP's rig but my TT would be OK in those conditions. My last trip for the season is Thanksgiving weekend. MD temps will dip below 32 overnight before then . As long as I monitor the temps and run the furnace when required my TT will be fine.
As I said the OP should plan to wait out or postpone travel in the event of snow and keep a close eye on the weather. A typical NYC December is doable with some determination.
