We do automatic billpay. We ask each company how much they want per month, and then send that. After two months this year we owed phone company $7, and electric company MINUS $140. We call credit card companies from time to time (never more than monthly) so we do not get behind. Usually we have a credit balance on them.
Once home, next months bill sorts out the small differences.

Same as others call the CC company's and pay on line through our bank the fixed payments are paid by the bank monthly.
I have a 3 year history on excel and pay the average for the month for water, electric and other stuff that varies from month to month and never had a problem.
I don't like to give out information for automatic bank withdrawal the less people that have access to my checking account the better.

I do what others say here, and pay most everything either by automatic debit or online bill-pay.
But I think what OP is saying, is that he can't be sure some odd bill won't show up while he's away. Having many years of records on Quicken, I spent an evening once going over about three years of Quicken, and making a list of all such one-time bills I'd had. Made sure after that to pay all those with a credit card, or at least to note on a calendar when they might be due (like property taxes). Amazingly few bills left over that won't take electronic payment or notify me by e-mail.
If one shows up, they can bloody well wait till I'm back. Serves them right for being backward!
I don't obsess about the internet stealing my information. Life has to go on.

All our utility bills are auto pay-the company drafts my checking account. All the subscription items like Air Card, Internet Provider, and Satellite Radio, On Star etc I pay annually and have set the annual payment for the winter when we are home. We do not use credit cards (Debit only) so there is not a problem there. The license plate fees for vehicles & trailers I catch up when I get home. We are normally gone about 5 or 6 months in the summer. I set the house insurance for winter when we are home. The various vehicle insurance policies are drafted from my checking account.

My laptop is equipped with a Verizon Aircard. On my computer I have a "Favorite's File" that contains the websites for all my bills. Around the 25th of the month, I go to each of the websites, see how much is owed and when it is due. Then I go to my bank account and use their bill payer feature. I just insert how much I want to pay and when I want to pay it and I'm done. I use the same method whether I'm on the road or at home......slick and easy! And my bank (PA State Employees Credit Union) does not charge for the service.

When my wife was alive I watched her at times do some bill paying on line. When she passed away I didn't think I had it in me to go through all that bill stuff day by day. I decided I wanted all my bills paid and went and added all my bills on line. I look three times a day at my account. I like switching from savings to checking on line as well. My girlfriends son is in the army and at times his account is minus and I add to keep him from getting extra charges and cover for him. He likes that but when his payday is come I take back my money. One of these days after he pays us off I will not float him. He will need to be holding his own soon.

All of our bills are automatically charged to one of our credit cards. Then, when I get an email from the credit card company that my statement is ready, I go online and pay it off using BillPay from my financial institution. By not using Automatic Funds Transfer, I insulate my bank account from fraudulent charges by hackers. I can always close a compromised credit card account, and had to do just that recently. It was nearly zero hassle, and the credit card company does the investigating in order to get their money back. I was out nothing$$.

We are now ull timers. We get e-mail statements and pay bills online. I do have a list of bills that have to be paid every month with a spot to check it off every month. Just to make sure I don't forget one.

We pay most of our bills online and the rest are paid by our daughter. We make out the name of the company with our signature on the checks and she fills in the amount. We also tell her what to expect and if it is out of line, she can tell us.
She picks up our mail at the post office once a week.
