You don't and are probably better off not covering. The only thing that would make me cover is if I was stored under pine trees for the winter. Like lan1964 said.

Covering WILL certianly protect it from UV deterioration and acid rain---EPDM roof, skylights & vents, paint, decals, plastic & rubber trim, and sealant/caulking---they all suffer when exposed....keeps all the pollution in rain/snow from causing those nice black streaks, too!

I've been using well-anchored tarps for decades without ANY damage....invert two or three HD cardboard boxes on roof, put a couple 2" X 4" between them, and then the tarp....roll out the awning a foot or so to allow ventilation...I use three 1" X 10' galvanized electric conduits under the frame so tie-down bungies & tarp won't touch/wear/scratch the exterior siding...and most snowfall slides right off mine.....

All you need to confirm what the elements will do, is look at a few Ts that haven't been covered!

I bounced back and forth all summer about covering our new HTT this winter. Finally, I decided not to. Last week, I changed my mind! I covered it yesterday. One of the biggest factors I originally failed to realize was the impact of the freeze-thaw cycle on the overall well being of our HTT where I live. I am confident with this decision at this time. I will let you know in the spring how it worked out!

SO -- how many people cover in the South? Specifically Houston Texas. Where it *might* freeze twice a winter. Is a cover necessary or recommended?

Here in Georgia its not the freezing I worry about its the constant heat in the summer beating down on the decals. On our next hybrid I am going to keep it covered. The one we have now is too far gone to worry about.

Are peeling/fading decals really an issue for many? All of our vehicles, pup and two htts have always been stored uncovered outside with no peeling issues. Our current htt, three years old (I think)still has bright colors and no signs of peeling Should I just consider myself lucky?

There could be other factors to consider. Mine is in the sun all day with no shade, maybe yours gets some shade throughout the day or as you say you might be lucky.
I also failed to mention the awning is peeling apart. On our last trip out when I unrolled the awning the very top part that is exposed to the elements was cracking and now it is coming apart. Before I can get rid of this trailer I will need to replace the awning and decals. I will be covering my next trailer!

We have always covered here in New Jersey. Right now I'm waiting for two to three dry days. The camper exterior will get washed and left to dry for over a day, then the cover can go on.
Next march the cover comes off and the camper is ready. As you can see it is stored around trees, even it wasn't I still think i would invest in a cover.
They make covers for specific climates, I do not think I would ever use tarps to cover the camper as they are not breathable and trap moisture underneath.

I do not cover even when I lived in Ohio. If you decide to cover make sure you get one the breathes.
