RE: Popcorn poppers

I received one of these for Christmas. It makes the best popcorn I have every experienced. Use the Orville Reddinbocker oil and your favorite pop corn.
http://www.thekitchenstore.com/019669000269.html
We have used this for years with the Orville Oil, but we switched lately and really like EVOO with it. Gives the popcorn a nice flavor and of course adding butter and salt.
Also if you are up for trying things an old family recipe is once you put on the butter we put on taco seasoning instead of salt. When I was younger it was an inexpensive snack compared to things like chips. My kids love it and has become a family tradition.

RE: Holiday Candy

Buckeyes
Peanut butter and margarine in equal amounts. Add confectioners sugar to make it playdoh consistency. Roll into 1" balls. Using a toothpick, dip balls into melted chocolate chips. Make sure you leave a spot uncovered (the eye). Place on waxed paper to dry.
No-Bake Cookies
1/2 c. margarine
1/4 c. cocoa
1/2 c. milk
Heat over medium heat to boiling. Boil rapidly while stirring for 3 minutes. Add 2 cups quick oats, 1 t. vanilla, and 1/2 c. peanut butter. stir together and drop by spoon on waxed paper.
These two are our families favorites. The Buckeyes are always a hit with anyone that comes over.
Here is the recipe for No-Bake we use...
Ingredients
* 1 3/4 cups white sugar
* 1/2 cup milk
* 1/2 cup butter
* 4 tablespoons unsweetened cocoa powder
* 1/2 cup crunchy peanut butter
* 3 cups quick-cooking oats
* 1 teaspoon vanilla extract

RE: when to peel hard boiled eggs

Having chickens we have learned how to boil eggs well. We have found the key is to put them in ice water after boiling. This seems to be the biggest factor when peeling (even over age of egg as sometimes we use fresh eggs from that day or the day before).
We boil fresh eggs for 5 minutes, then take off heat and set in the pan with hot water for 15 minutes, then put in ice water (keep adding ice if it goes away), till cool. You can peal at anytime after this is done it will not matter if it is the next day or right away.
Have fun!

RE: your favorite egg recipes?

Welcome to the life of figuring out how to use up the eggs. LOL
As said Angel Food cake uses up a dozen eggs with the whites, Pound cake, egg casseroles use a good amount. Fresh eggs are harder to boil and peel, but my wife has found a way to make it work. Not low fat, but we do puffed pancake. 4 eggs, cup of flower, cup of milk. Pretty much every other meal in the house has an egg in the recipe to help diminish the overstock. Not to mention neighbors are normally happy to take some, normally we try to trade 6 eggs for an empty egg carton. This helps them out and us out for storage at the same time. Also they last up to 3 months if not washed so it is always good to stock up for when they molt or get broody.

RE: Gooseneck versis 5th wheel hitches

What type of gooseneck hitch do you have? B&W makes a 5th wheel attachment for a gooseneck hitch. Not an adapter for the trailer, but it is a 5th wheel hitch used in the gooseneck hitch slot. It is called the companion by B&W. It has already been mentioned on this post, but feel it was overlooked as an option. You get the best of both worlds, a clean bed and a 5th wheel hitch.

RE: Cream cheese on a burger...?

Sounds Good! I know about 10 years ago a Hot Dog vendor in the bar district of Seattle put cream cheese on the hot dogs. Man that was good. Just like having peanut butter on your waffles and then put syrup on top. Now you have me getting hungry. I know my fathers day meals now....lol

RE: Plowshare cooking

Yes we use them. Have seen it as a new fad too (we just got ours off a friends farm). Anyway they are going for a pretty penny from what I have heard. A lot of them use old horse shoes as handles.
look up disk cooker on google and there will be plenty of pics.

RE: What can I make in my new Pie Iron?

2 strips of bacon
2 pieces of bread
1 egg
Cut your bacon strips in half and lay them in the bottom of the Pie Iron. Put a piece of bread on top of the bacon (no oil needed), gently pressing it down. Crack an egg on top of the bread and break the yolk, and top it with the remaining slice of bread, add the second cut bacon piece on top of all of it. Close up the Pie Iron, trim any protruding bread and cook, turning periodically. Check it every now and then, when the bacon looks done the egg is done also.

RE: First Night Meal Ideas

We hit up our local BBQ hut and get some chopped brisket, buns, couple sides and sweet tea and head out for the camp ground. Heats up easy if a long enough trip and we normally get enough to last all weekend for snacks. :)

RE: Coleman Roadtrip question

I have a road trip and grill a lot. I bought it for all the different burner covers. My next purchase will be a Weber Q. I find it when grilling to not be the easiest to clean up. I do like the folding stand and the ease of putting it in my storage compartment. I just don't like the clean up. Other than that the grill is great. This is my opinion and I know people feel differently.

RE: Favorite Pie Iron meals

Not sure what the official name is, but our family favorite is a breakfast sandwich.
put one side of the pie iron, put a piece of bread on top of that, push down the center of the bread and crack an egg open and put it in the center of the bread. Then put another piece of bread on top along with bacon covering the top of the bread. Close the pie iron (bacon should be on the outside of the sandwich), cook until the bacon is done (at this point the egg will be done).
Camping in 2 weekends and can't wait to get a taste of this again. Sometimes we even make them at home...:)

RE: kitchenaid stand mixer vs. other brands

I grew up with always having one around the house (mom still has it). As you said it is hard to justify the expense, but we bought one 2 years ago after a long time with out, we wouldn't go back. I know too many people who stand behind their kitchenaid equipment, we now do too. We did have a problem with our first one, the lever stuck on speed 4, nothing major. The best part was Kitchenaid has a 2 year warranty and it is a pre-replacement unit warranty. It was great, we were never with out the mixer. They shipped a new one, we packed up the old one and shipped it back.
