I only traveled on vacations in my C and I HATED the dinette. Couldn't take it out because the fresh water tanks were in the seats. I took the table out after the first trip and never put it back. Made it much easier to move around.

Boy, we have gone round and round on this. I would like to put a nice loveseat with footrests in the space or two small recliners. Ours is on the small slide which is raised six inches so club chairs and ottoman are not an option. Wife loves the dinette in fact we got the BT with dinette instead of couch and we had an option so we keep the dinette. In recent remodeling we redid the upholstery and replaced the table with a very nice amish made on a pedestal. It sure did make the space look great and I guess I am done whining about taking out the dinette.

We also are thinking about taking out the dinette. Wondering what kind of recliner(s) would be suitable to go in that space. We also would like to have some sort of small table under the window.

I had the same setup as you in my 2004, 24 ft Coachman.
I removed the dinette and replaced it with a bench that is 29" x 76"h with a cushion. Gained nearly a foot in width of floor space.
I turned my 30 gal water tank, converter and heater duct 90 degrees.
Placed a hinged lid in the bench seat for access to everything below.
Also removed the jack knife sofa on other side. Looking for a swivel chair.
Amazed with how much space I now have.
Have built a slide out pantry over the passenger side wheel well and I am in process of building folding tables.
Would be nice if we could buy the motorhomes without interior mess so that we could make them fit our needs.
If anyone is interested in dinette cushions and the sofa, we can make a deal.
They are in very good condition.

In the slide-out the dinette was very tight and confining due to the step up and slide-out wall thickness and lowered ceiling. Not so if constructed on the open floor with no slide. We have lots more leg room and a much larger table. We even have more head room to get out.
I would much rather give up the floor space gained in a slide-out, for a more comfortable dinette. If you have a dinette in a small slide-out, then I could understand the desire for a change.

Whether or not you can remove the dinette benches will depend on how the manufacturer used the space. It may be just storage for you, and you should have no trouble taking them out. It may be utility space (I've seen water tanks, water heaters, furnaces, DC converters, inverters and battery banks in dinette benches), then you need to find another place for that utility. I've also seen space under dinette benches used for outside storage bins. Chances are, if there was alternative space, the manufacturer would have used it.
For a 2001 Jamboree 26F, the only way to find out is to inspect it.
If I wanted a C with no dinette, I would be looking at floorplans that came without dinette; there are quite a few. Then, you must be sure you like whatever seating is left, because it may used to hide utilities, since there is no dinette space for the purpose.

You can. Winnebago is one company that builds shells, or does custom builds, has two departments to handle the orders, one for accessibility customers, the other for commercial/industrial.
If you are looking to buy a motorhome shell, not just a motorcoach shell, it is still somewhat limiting, because of the need to fit your interior plan to the location of the sub-floor utilities.
I'm pretty sure one of the coachbuilding companies at Thor also offer empty shells. It should also be possible at Forest River.
Just don't expect dealers to stock empty shells, and sell them at distress prices. The market isn't big enough for mass production, it is all to customer order.
