Not camping but will be staying in MH in parent's driveway. There will be 40 for dinner this year. Menu!!! Fresh fruit salad, Italian Wedding soup, Manicotti, braccioles, meatballs, sausage, turkey with all of the fixings, home baked bread, and lots of desserts. We do 6 birthdays including my Father's 87th and numerous other celebrations. Everyone brings a course and we start eating around 2 and take breaks between courses and for football. This size group happens every other year when the third and fourth generations are "here" rather than with the other side. Friday we head to Lancaster,PA for shopping and a last trip before we winterize.

We're going to our son's house in Boise for the T Day and I have no idea what we're cooking or eating.....we may end up going out for dinner. I do plan on having T Day dinner the weekend before Thanksgiving for just the 2 of us. I love cooking a turkey and all the fixings: Roasted turkey, apple/sausage dressing, riced potatoes, gravy, brussels with pancetta and chives, fruit salad, and pumpkin pie with whipped cream for desert. Going to share my favorite make ahead recipe for holidays...perfect to take along for an RV Thanksgiving and they are delicious!

DREAM POTATOES

5 pounds of potatoes, peeled cooked and mashed with some potato water (russets work best) 3 average size potatoes equal about 1 pound

To the hot mashed potatoes beat in until smooth and creamy:

8 ounces of softened sour cream (low fat or no fat is fine)
1 cup sour cream (low fat or no-fat is fine)
1 teaspoon salt
¼ teaspoon white pepper (black will work)
2 tablespoons softened butter or margarine
Generous dash of garlic powder (optional)

Place in a casserole. These potatoes can be refrigerated up to 2 weeks or freeze them and use in 2-3 months. Bake at 350 or microwave until heated through. I use these for every holiday. I can make them ahead of time and I don’t have to mess around with making mashed potatoes just before the meal is served.

Turkey fried in our Big Easy (no oil)
Brussels sprouts halved and sauteed in garlic butter
Cranberry-jalapeno jam (or sauce if it doesn't jell)
Roasted vegetables (eggplant, sweet potatoes, carrots, onions, whatever else appeals)
Garlic mashed potatoes
Cornbread dressing
Turkey drippings gravy
Pumpkin souffle
Cherry pie
Flan cake
Wine
Gaviscon

I love all the meals posted here but at our house it just wouldn't be Thanksgiving without the traditional roasted turkey, stuffing, pumpkin pie, etc. We do not camp or travel over TG so I always cook it inside and enjoy the wonderful aromas. I can hardly wait.

Do you mean 8 oz of cream cheese? You have sour cream listed twice.

Thanks for the tip on brining! I have a cooler that would be perfect for that. I was wondering how we were going to brine the bird.

I will be doing most of the cooking at the trailer. It is just DH and my parents this year so the food prep won't be much work.
