If you want to be the hero of the neigborhood learn how to sharpen knives. It does take some practice and not a bad idea to use some cotton gloves when you are just learning. I learned to sharpen knives in a resturant many years ago. The link shows the sharpener I use. With the three stones you can take a piece of junk and turn it into a razor in a few minutes. I do have an old leather belt attached to my work bench to put a finishing touch on them. I only need to touch my knives about twice a year with the stone and then only need the finest grit since the bevel is where I want them. As mentioned a good steel is a must to keep them tuned up in between sharpenings. You can use two knives together but that is a dangerous method and not for the faint hearted. To transport knives roll each one up in a dish towell.

YC-1 thats the one we used to have when I was cooking in the detention centers,it is a great set of stones, especally when I sharpened my large 12" 40 year old carbon steel chiefs knife great for water melons now. to bad it cost so much money I'd buy another.

OP, I know the feeling. Like my dad would say, the best way to keep a good screwdriver is to buy a set of chisels. lol. Besides, her entire family can tear up an anvil with a rubber mallet. I love them all dearly, but they are tough on stuff.

That said, I use a Chef's Choice, but saved my quality knives by getting DW a cheap set of her own Ginsu knives from Walmart.

It is not cheap but has lasted me 30 years and I will likely pass it on. It was a Christmas gift from my wife. She paid $85 for it then.Since we hunt and fish and dress all of our game sharp knives are a must. Heck, a good chef's knife can cost over $100 easily so the investment is really worth it if you have a lot of knives and like to be the neigborhood hero. My main Chef's knife is almost 40 years old now and is razor sharp. It never goes in the dish washer of course. The Cutco's are fine in the dish washer but the wood handles on the old knives won't take it. I love the German steel of the old knives. The Cutco's are excellent, expensive, but lack the character of my old friends.
