Howdy,
I have a house full of dull knifes. My DW never seems to ever use the "correct" knife for its respective job. I caught her using my best boning knife for cutting stems on some flowers for the table.
I have a Lansky knifes sharpening system but if I were to try to do all these knifes I'd be forever and a day.
What do use use? Someone must have a powered stone that works good (not the ones on the back of can openers).
I remember as a kid a guy coming down the street and offering to sharpen knifes, the housewives would line up to have him sharpen them like new with a foot operated stone. Where is he today?

if a knife is bad enough, i'll start out with a fine file then go to a stone or rod. be careful, you can ruin a knife if you get the edge wrong and can't get it back.

FYI plural of knife is "knives" with a "v" not an "f".
I want to leave this earth quietly in my sleep like my grandfather and not like the hysterical, screaming passengers riding in granddad's RV just before the big crash.

Take a look at "Chef's Choice" Knife sharpeners. They're "fool" proof. I have the three slot model. First one evens the edge. Second slot sharpens, and the third slot puts a razor edge on it. Magnets in each slot keep the knife at the proper angle as you pull it across the sharpening stones. Bed, Bath and Beyond sells them. So does Cabela's. I'm sure there are many others.

I had a Chef's Choice and didn't like it because it doesn't go all the way back and leaves a dull section near the handle. Those small ones you hold in your hand and draw the knife (or knives) through work well for me, then I touch it up with a "steel" like the chefs do.

Many pros today use a bench belt sander, the kind that runs a 2" belt. They finish knives with a diamond stick. This produces some really sharp auger bits and knives, if you're careful.
I have a diamond Lansky and it will do dull knives, but it takes some time and elbow grease.

I too have the Chef's Choice and like it. After sharpening all our knives with two oil stones and a steel I decided I needed something quicker. I find that the knives still need few swipes on a steel after using the third slot. I got mine a year or so ago on E-Bay for about 100 bucks. They're made in the USA.

I agree with Jim Shoe and Jerrybo66. I have used a Chef's Choice for many years and love it. It allows you to first put a proper edge on the knife and then (and in the future) allows you to keep the established edge.
This device was recommended by Consumer Reports years ago and continues to be the best knife sharpener.
Mine keeps all of my knives super sharp.
