Stir in some corn and make patties, dust them with flour and fry them. You can also top the fried patties with cheese, melted under the broiler.

Many years ago, my mom would make-em like pancakes, browned enough to keep them together and served with whatever meat dish, it brings back some great meals of yester year! Bill

usually the kids complain because there isn't enough, so I made wayyyyy too many. Thought I would outsmart them....

My MaMa would would mix an egg , flour with left over mashed potato's make patties and fry they were good.

One time, when I had lots of mashed potatoes left, I used them in corn chowder and it worked great.

I have used them to 'frost' a meatloaf. Cook the meatloaf, frost with mashed potatoes, brown the potaoes a bit under the broiler, then drizzle with mushrooms and gravy.

We mix in an egg or two and fry them into patties. I've been thinking of sauteing some onions and jalapenos and mixing that into the patties too, but never get around to it.
