anyone have anything new and exciting to do with them?

I made a ton of mashed taters, then we didn't end up eating them all (not sure why I thought we needed so many!).

Yesterday morning, I made potatoe pancakes with them....

now what?

This site is really great for quick recipes, so I popped your question in and came up with 143 recipes for leftover mashed potatoes-I'm going to go mash some right now. . .

Zip loc and freeze them for small portions. They thaw and reheat just fine.

-topping for any casserole, with some grated cheese on top
-baked potato soup (add smoe chicken broth, onion powder, milk, black pepper, and top with crumbled bacon, cheddar, and sour cream
-there's a candy that uses mashed potato, I made easter eggs with it one year, don't have recipe
-there's a recipe for potato salad that uses mashed potatoes. I think I saw it on the Pioneer Woman blog. I think it had the usual potato salad ingredients
any kind of stroganoff or meat/gravy combo spooned into mashed potato nests
-pierogi filling
-or lazy man pierogi- lasagna noodles, mashed potato, sauerkraut, cheddar, sour cream, bacon. LAyered and baked.

Do the portions in a plastic bag (sandwich size) and flatten so they freeze faster and can be cooked on grill or skillet.

use with canned salmon for salmon loaf or croquets.

I make mashed potato salad. Just add mayo, dill pickles, celery and onions all chopped. Have not made tater salad with chunks of taters in over 50 years.

Mix mashed potatoes with an egg, a little milk, and grated cheese. Put into a casserole and bake for approx. 30min. at 350 degrees.
