Anyone else out there a fan of this Mexican style breakfast dish?
I recently spent some time working along the Mexican border in south Texas and I just love the food down there. My all time favorite for breakfast is Huevos Rancheros. I first had this dish about fifteen years ago when I started doing some work in south Texas.
I have had this prepared many different ways and each little diner seems to make it just a bit different. Its easy to make and I make it on occasion for my crew.
Basically the dish is a couple of over medium fried eggs served on a warm corn tortilla or even on some crumbled corn chips. Warmed salsa poured on top of the eggs. Refried beans on the side and served with a couple more warm tortillas. If you don't care for the corn tortillas the flour works just as well. It is also usually served with some sauteed beef cooked in a red pepper sauce. Some places serve crumbled up bacon on the side as well. Its fast, its easy and its good. Give it a try sometime if you like Mexican food.

I make those all the time for breakfast - one of my favorites! YUM!! I top mine with shredded cheese, salsa, and sour cream.

You haven't had anything until you've had a Huevos Rancheros in New Mexico. Hatch New Mexico Red or Green Chile sauce covering a white flour torilla with two over easy to medium fried eggs then covered again with Green or Red Chile, papas fritas and refritos and all that smothered in Longhorn or Cheddar cheese! MMMMmmmmmmm!

Huevos Rancheros are a tasty breakfast indeed! Upon accepting my first assignment working as an engineer to set up a greenfield maquiladora for one of the LARGE American aerospace companies, I learned on my very first morning in Mexico that you cannot find them on the menu in a real Mexican restaurant, in Mexico.
Huevos Rancheros, (Ranch Eggs), as eaten on working ranches in Mexico are simply sunny side-up eggs with some chopped tomato based salsa on top, usually eaten with a bolillo, (a crusty French Roll, not a tortilla in sight). That's it.
The recipes including tortillas underneath, beans, rice, potatoes, and any other topping are recipes of the American Southwest, as American as the burrito, chalupa, and gordita, all invented in the U.S.A.

We live in Baja and the Huveos Rancheros here all have beans salsa and torts along with the eggs of course. We used to live in Mulege and they were the same as here.
