RE: a question about cast iron skillets

I cook a lot of things in "black skillets". I have mine seasoned to the point that eggs don't stick. I wash mine in sink dish water with the dish rag not scrubber. Rinse with HOT water. Set wet on burner with flame about med hot. When dry, no water on skillet, I put about a teaspoon of OLIVE OIL in the skillet, turn off the burner, use a paper towel or coffee filter to spread the oil around and coat it thoroughly. NO runny oil. If I put in too much I wipe it out. I store the black skillets in the oven. I choose to use olive oil because the vegetable oil on the skillets developed a smell. It could have been my imagination but with the olive oil there is no smell. If I over oiled it I spread the excess to the bottom side of the skillets too. When cooking an egg (one or four fried, or several scrambled) I put a few drops of olive oil in the skillet and add Shed Spread "butter". And I cook the eggs on medium flame. And I use a silicon spatula to move the eggs around and flip them. When you heat dry the skillets and coat them in the olive oil after several times if you don't scratch/scrape the finish it continues to build up and add a nice finish. HOWEVER, one sure fire way to mess up the finish is to add tomatoes to the mixture. The coating will come off and you will have to start over. Some people swear that black skillets and such should never touch water. If the finish is good you can spray out the remaining food residue and let is stand in the empty side of the sink and wash it with a soapy dish rag and rinse and dry on heat. Soaking shouldn't be done as it does remove the finish. ETA: NEVER let the skillet get so hot it smokes. Then the finish is burned. Cheryl

RE: adding a bunk

If you are willing to drill through the walls and possible have a bolt head show on the outside (siliconed of course!) then is there any way you could install eye bolts (large!) across from each other rig up a "hammock" situation for your little one? You could tie it off to the third wall or a cabinet etc... so it wouldn't swing! Just a thought. And it could be taken down for the daytime. Cheryl

I drive a 1966 VW Beetle EVERYDAY. I would love to have one of those trailers. Way cool!!! (I drive the Suburban when it rains or I transport more kiddos than the Bug will hold.) Cheryl

We have our TT at a new by campground on a "permanent" site. This past winter we had mice. We plugged every opening we could find and that was only about 4. Related to fresh water incoming plumbing. What I did find was if when we left we put the stoppers in the sinks and tub with a little water in each with a little pine sol we had no mice. We are connected to the sewer full time with valve open. I know most don't recommend that but we do it. Seems the mice must have been coming up the drains. Just something to consider. Cheryl

RE: cleaning

While we are talking about cleaning.... I have been sitting here thinking about how to clean glass. For those of you with windshields, what have you cleaned them with. My reason for asking is I drive a 1966 VW Beetle everyday and was wondering if a Mr. Clean Magic Eraser would get the windshield and windows clean without harming the surface. I am asking here because y'all brought up cleaning and MHs have BIG windows that are exposed to "road" grime. Thanks, Cheryl

I have watched every show leading up to last night's show. The best ones last night ?...Kevin Skinner (chicken catcher!) and the magic act. Everyone else just didn't rate in my opinion. I just don't understand why the stand up comic old lady was even considered, unless it was because they need to have someone to disqualify :R Cheryl

My absolute favorite car is the one I drive everyday. My Bahama Blue 1966 Volkswagen Beetle, 1776 dual carb engine. No a/c, stick of course, and I do all the maintenance on it. Man! I love that car. Oh, when I have extra foster children....I drive my 2003 Suburban. We can't afford (and don't want to afford) the one-week-per-year vacation. Besides we do foster care and need two weeks notice to get a travel court order to leave the state. So spur-of-the-moment trips just don't happen. So to remedy this we bought our 2009 Springdale 29 ft travel trailer last July. It sleeps 10 comfortably depending on size of child and/or baby. We towed it from Meridian 130 or so miles to Askew's Landing Campground at Edward's MS and parked it on a "permanent" site, back under the oak trees, full hookups, $200 a month plus electric. Most electric has been was $27.00. We are able to keep everthing we need there and can grab extra clothes and food and head out there on Friday evening and come back Sunday late. Lake and pond for fishing, swimming pool, trails, petting zoo, country store, geese and ducks....around 100 sites. Close enough to go home to check on anything that could need checking. 20 minutes away by highway.....millions of miles away by atmosphere. Cheryl

I fight for the shade trees in the morning! Oh, and the "umbrella" would just fold up neatly like a regular umbrella and store in the trunk. :C Cheryl

You might want to take any food that might not maintain "quality" (melt!) with you. And if you have tall candles that you might become concerned about, put them in the refrigerator. Put plants in the bathtub with water. If humidity is a problem leave drawers closed, but get any important papers out of the drawers first so if you were to need them and the humidity caused the drawers to stick you would have the papers and not damage the drawers until the A/C adjusted the humidity. If you have crayons in the house put them in the refrigerator or a good container so one won't stain whatever it is laying on ... yes it does happen in heat. All this is rather extreme but it may be something you haven't thought about. Turn off your ice maker.

RE: How/Where to drain Liquid?

I drain pasta and such into an empty dishpan then let it cool a little while I finish preparing the food. Then the pasta water gets poured down the toilet. At least once a day a dishpan of soapy water gets poured into the toilet, let it soak until the next person goes to the bathroom and they can flush it. Easier to clean the toilet ! Grease gets wiped up with paper towels and put in a baggie and sealed and into the trash. Diapers are out "toxic" waste ! They get rolled up , secured by the tabs and tossed in the trash bag. when the trash bag is full we put the bag in the barrel at the campground.

I think the simplest way I determined what to put in the TT and leave in the TT was to make a list of everything I used/did each morning to get ready for the day. Once that daily routine was written down I was able to make a list that went from tooth brushes/tooth paste/soap/shampoo......to extra Rx bottles for everyday meds for one month of every weekend camping. We did this for everyone and compaired lists and eliminated several items and were able to stock the bathroom. Tools: basic to start with. For the kitchen: I spent about a week of doing this. I put a storage tub on the kitchen counter and everytime I used an item in the kitchen, other than plates, fork, spoon, etc.., I put it in the tub (clean) If it was already in the tub I used it and put it back. At the end of the week I pretty much knew what I needed to set up a basic kitchen. Oh, then I looked at the items in the tub and decided if I wanted to buy new for home and use the old ones in the TT or buy new cheap for the TT. I hope that makes sense....

RE: need help pork tenderloin and make ahead meal

Our favorite way to prepare pork tenderloin is to slice it about 1 inch thick and grill it on the grill seasoning with only salt, pepper and garlic powder. Remember it cooks quickly so don't over cook it. Cheryl

Need new menu ideas for this coming weekend.

I need ideas for food to serve for Thursday evening, Friday, Saturday and up to lunch on Sunday...3 suppers, 3 breakfasts, 3 lunches... We will have hamburgers and sausage dogs for the 4th lunch/2:00 meal. I can fix anything for breakfasts. Full meal deal or cereal or sausage biscuits etc... But we are tire of the usual... Do you have anything different or different ideas? (4 adults, 2 teenage boys! 4 yo, 2.5 yo and 18 month old) Cheryl

RE: Natchez state park

We live about 60 miles north of Natchez and have camped twice there. We like the new part of the campground. The old is OLD, under pine trees and BROWN! The new is nice. BUT there is nothing to do except watch the wild turkeys and sit. Kids would go crazy if you didn't bring the bikes. No swimming. Grand Gulf State park north of Port Gibson is a good quiet get away. Both are cheap too. We "permanently" parked our travel trailer at Askew's Landing Campground at Edward, MS 14 miles east of Vicksburg. LOVELY country setting with swimming pool, pond, lake, lots of fishing, lots of geese and ducks. Athletic field, petting zoo of sorts. Cheryl
